7 Ingredient Cranberry Cookie

Before my son was born, I was on a mission to be able to make the best cookies. Some of my favorite memories were when I would come home after the first day of school or first volleyball game of the season and my mom would have fresh chocolate chip cookies waiting for me. She always made the best cookies and always made them so effortlessly. When I try to make the same cookies, I usually end up with more flour on my floor and ceilings than in the bowl and my cookies never turn out the way hers did, no matter how hard I try. I thought I was just going to have to stick to my pre-made cookie dough until I stumbled across a 7 ingredient cookie recipe on TikTok.

This TikTok user made this simple cookie recipe with blueberries and the cookies turned out to be a really pretty blue/ purple color. As much as I like blueberries, I was excited to try it with cranberries instead. As we creep closer to our harvest season, I am looking for ways to use up the frozen cranberries I have from last year to make room for more this fall. This cranberry cookie experiment was a success for my first time trying, but i think I am going to try tweaking the recipe to make it even better- maybe an orange glaze frosting next time?

Here’s how I made the 7 Ingredient Cranberry Cookie:

  • 1 Cup All Purpose Flour
  • 1/2 tsp Baking Powder
  • Dash of salt
  • 1/3 Cup Unsalted Butter
  • 1/2 Cup Sugar
  • 1/3 Cup Frozen Cranberries
  • Measure with your heart: White/Milk/Dark Chocolate Chips, Walnuts
  1. Preheat oven to 400°
  2. In a small bowl, combine flour, sugar, and salt
  3. Take cranberries in microwave safe bowl and microwave for about 30 seconds or until they get soft and begin to split
  4. In a separate bowl, combine butter and sugar and cream together until smooth with stand or hand mixer
  5. Add cranberries to the butter and sugar mixture and continue mixing until the berries are pureed and the mixture is pink
  6. In small amounts, fold the dry ingredients into the creamed mixture until all combined
  7. Refrigerate dough for at least 30 minutes before forming into balls on a cookie sheet
  8. Bake 10-13 minutes or until the edges turn golden brown
  9. Cool 5-10 minutes before eating
